This latest branch occupies a small, unassuming space near Silang, Cavite’s town plaza, but that hasn’t stopped people from coming in droves. In the five years since, that gelato ice has fueled branches from Biñan to Los Baños, even crossing over to cities like Trece Martires and Imus in neighboring Cavite. Instead, each tall glass comes filled with heaping servings of gelato ice. That Italian influence is responsible for his shop’s fresh take on a Filipino summer staple: Ben’s halo-halo ditches the usual shaved/crushed ice and milk. The first Ben’s Halo-Halo opened in San Pablo, Laguna, in 2013, when founder Ben Pasco quit working in Italy’s kitchens to start a business in his hometown. Ben’s Halo-Halo, a beloved Laguna brand, has expanded further into Cavite, bringing its signature halo-halo hits to more of the sunburnt south.
